Applesauce Cookies
A soft and tender cookie with a cake-like texture and apple and spice flavors. perfect holiday cookie.

Ingredients
- ½ cup shortening Crisco
- 1 cup brown sugar
- 1 egg
- ¼ cup cold coffee
- 1 cup unsweetened applesauce
- 1 ¾ cup all-purpose flour
- ½ teaspoon baking soda
- ½ teaspoon salt
- ½ teaspoon ground cinnamon
- ½ teaspoon ground nutmeg
- ¼ teaspoon ground cloves
- ½ cup raisins
Instructions
- Mix the shortening, sugar, and egg until well combined and smooth.
- Stir in the applesauce and coffee, mix to blend.
- Add the flour, baking soda, salt, nutmeg, cloves,and cinnamon. mix well.
- Fold in the raisins.
- Refrigerate the cookie dough for 2 hours.
- Preheat the oven to 400° Fahrenheit.
- Use a small cookie scoop to drop dough onto the parchment lined baking sheet.
- Bake for 10-11 minutes.
- Remove from oven and let cool for a couple minutes before transferring to a cooling rack
