  • You can easily half the recipe if you prefer a smaller batch of cookies.

  1. Cool Completely: Allow the cookies to cool completely before storing them. This prevents condensation from forming inside the storage container, which can make the cookies soggy.
  2. Use an Airtight Container: Store the cookies in an airtight container to maintain their softness. A plastic container with a tight-fitting lid or a resealable plastic bag works well.
  3. Add a Slice of Bread: To help keep the cookies soft, place a slice of bread inside the container with the cookies. It’s one of those old-fashioned Grandma tips; the bread will absorb excess moisture and keep the cookies from drying out.

Ingredients

  • ½ cup shortening Crisco
  • 1 cup brown sugar
  • 1 egg
  • ¼ cup cold coffee
  • 1 cup unsweetened applesauce
  • 1 ¾ cup all-purpose flour
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ½ teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ¼ teaspoon ground cloves
  • ½ cup raisins

Instructions

  • Mix the shortening, sugar, and egg until well combined and smooth.
  • Stir in the applesauce and coffee, mix to blend.
  • Add the flour, baking soda, salt, nutmeg, cloves,and cinnamon. mix well.
  • Fold in the raisins.
  • Refrigerate the cookie dough for 2 hours.
  • Preheat the oven to 400° Fahrenheit.
  • Use a small cookie scoop to drop dough onto the parchment lined baking sheet.
  • Bake for 10-11 minutes.
  • Remove from oven and let cool for a couple minutes before transferring to a cooling rack
